Blue smoothie is very easy to make and this recipe version has the smoothie come out almost like ice cream, without the cream! Frozen bananas get transformed into creamy and icy goodness, the perfect texture for a smoothie bowl.
How to give a smoothie blue color can be made easily by adding a little blue spirulina (blue spirulina is a natural blue pigment derived from blue-green algae).
If you use the blue powder…it’s going to be the very easiest blue spirulina smoothie bowl you ever made!
Make it a rainbow bowl (it really is like a rainbow with a sky background) by using every fruit you can, in every color possible. I even added ube jelly to give it lavender and a fun, chewy jelly texture at the end.
Tapioca pearls give the smoothie more to love with their bouncy texture on top of the most gorgeous blue spirulina smoothie mix.

Ingredients
Smoothie:
- Frozen Bananas – Peel, cut up, and freeze ripe bananas that are spotted brown on the skin.
- Blue Spirulina – just a pinch makes the smoothie blue and adjust to your preference
- Vegan Coconut Condensed Milk – (optional) Adds more sweetness, a little coconut, and creates a sweet treat like vegan ice cream when combined with the frozen bananas.
Fruits and Toppings:
Choose any fruit or toppings that you like for your rainbow colors. Listed are fruits that resemble colors of the rainbow. Feel free to use some or all of them.
- Strawberries
- Yellow Mango – Philippine Mango/Ataulfo Mango are sweetest variety.
- Jackfruit
- Pineapple
- Green Grapes
- Pandan Jelly
- Blueberries
- Ube Jelly
- 1/8 cup uncooked Tapioca Pearls – Follow package instructions; small tapioca pearls are very easy to make and cook quickly.
- Coconut Shreds

Equipment Needed
- Food Processor – Necessary to make the frozen banana into a vegan ice cream like texture.
Instructions
- Blend the frozen bananas, blue spirulina, and vegan coconut condensed milk in the food processor until very smooth.
- Place the smoothie mix in the freezer while you cut the fruits.
- Cut all the fruits into small bite sizes.
- Take the blue smoothie and layer into a wide and shallow bowl.
- Add the fruits, layer by layer, in the order of the color of the rainbow and in an arch shape to resemble a rainbow.
- Add tapioca pearls at the bottom area of the “rainbow” like a cloud. Enjoy your blue smoothie rainbow bowl.

Be sure to use very ripe bananas.
Serve right away once you have put the fruits so the blue spirulina smoothie bowl does not melt down.
