Ingredients

Smoothie:

  • 2 cups Frozen Bananas - Peel cut up, and freeze ripe bananas that are spotted brown on the skin.
  • 1 tsp Blue Spirulina just a pinch makes the smoothie blue and adjust to your preference
  • tbsp Vegan Coconut Condensed Milk - optional

Fruits and Toppings:

  • Choose any fruit or toppings that you like for your rainbow colors.
  • ¼ cup Strawberries
  • ¼ cup Yellow Mango - Philippine Mango/Ataulfo Mango are sweetest variety.
  • Jackfruit optional
  • Pineapple optional
  • ¼ cup Green Grapes
  • Pandan Jelly optional
  • ¼ cup Blueberries
  • ¼ cup Ube Jelly optional
  • 1/8 cup Tapioca Pearls (uncooked) Follow package instructions; small tapioca pearls are very easy to make and cook quickly.
  • Coconut Shreds optional

Instructions

  • Blend the frozen bananas, blue spirulina, and vegan coconut condensed milk in the food processor until very smooth.
    2 cups Frozen Bananas - Peel, 1 tsp Blue Spirulina, 1½ tbsp Vegan Coconut Condensed Milk -
  • Place the smoothie mix in the freezer while you cut the fruits.
  • Cut all the fruits into small bite sizes.
    ¼ cup Strawberries, ¼ cup Yellow Mango - Philippine Mango/Ataulfo Mango are sweetest variety., ¼ cup Green Grapes, ¼ cup Blueberries, ¼ cup Ube Jelly
  • Take the blue smoothie and layer into a wide and shallow bowl.
  • Add the fruits, layer by layer, in the order of the color of the rainbow and in an arch shape to resemble a rainbow.
  • Add tapioca pearls at the bottom area of the "rainbow" like a cloud. Enjoy your blue smoothie rainbow bowl.
    1/8 cup Tapioca Pearls (uncooked)

Notes

  • Be sure to use very ripe bananas.
  • Serve right away once you have put the fruits so the blue spirulina smoothie bowl does not melt down.
  • Using a food processor is key to making the frozen bananas the perfect texture. A blender will not mix the frozen bananas because there is no liquid to add to the recipe. So try to access a food processor for the best turn-out.

Add Ins and Variations

  • Add coconut milk to the smoothie mix to make it more tropical.
  • Drizzle coconut cream on top to make clouds.
  • Freeze the blue spirulina smoothie mix, and then re-smooth it by putting it in the food processor again. It will become like an ice cream texture.
  • Use any or all fruits, jellies, and toppings. Add nuts for crunch or chia seeds.
  • If you want an alternative to the blue spirulina smoothie bowl then you can make any smoothie you like.
  • Add spinach to the smoothie mix as a superfood booster.
