I am always thinking of ways to add tapioca pearls into my drinks!! Haha, yes! It’s so fun and screams sunny day vibes to me. If it takes my brain to imagine that I’m sitting on an island, even better.
I was really inspired having made so many drinks with tapioca, and having tried many in SouthEast Asia to all over Australia, I crave tapioca with blended and ice-cold drinks.
That is why I had to make a cloud-like pineapple coconut drink with tapioca.
Not only does it satisfy my nostalgic cravings of texture and sweet coconut flavors, but my kids have so much enjoyment with these sago dessert flavors! After I had an epic dark cherry sago the week before, I said to myself that the color yellow was uplifting and pineapple with coconut is always happy…let’s go!

- 4 cups water
- 1 small can crushed pineapple (with juice)
- 2 tbsp blue agave syrup (adjust to taste)
- 1/2 tsp vanilla extract
- 1 can 14oz full-fat coconut milk
- 1/2 cup condensed milk (or coconut condensed milk for vegan option)
- 1 cup frozen pineapple chunks
- Pinch of salt
- Ice

- Small bowl
- Blender

Instructions
1. Cook the Tapioca Pearls
- Cook tapioca pearls according to package instructions.
- When almost translucent, remove from heat, cover, and steep for 8 minutes or until fully translucent.
- Strain, then mix with blue agave syrup and set aside.
2. Make the Sweet Coconut Milk Sauce
- Heat coconut milk with condensed milk in a saucepan or microwave until well combined.
- Stir in vanilla extract and a pinch of salt.
- Let cool before using.
3. Blend the Frozen Pineapple Mix (optional)
- Blend frozen pineapple chunks with a portion of the sweet coconut milk sauce until smooth. This adds a wonderful layer of flavor, depth, texture, and refreshingness to the entire drink. It also allows for more fruit to be blended in if you like.
