I am always making smoothies, glow juices, and especially ché and Asian sago/tapioca pearl dessert drinks. I love that they are so, so, so yummy…and better than a lot of options at the regular grocery store. Me and my kids have a lot of fun with these homemade treats!

I got inspired..and I made a black cherry ice cream inspired dream of a dessert! Grabbing the frozen cherries I had on hand, and mixing up some comforting evaporated milk and sweet condensed milk….voila! My idea of a cherry sago drink was here.

I love using real fruit to make these bubble dessert drinks that make you sit down and just savor every sip and bite.

Bouncy tapioca pearls and some frozen cherries in tops are a knockout combo.

Dark Cherry Sago is a luscious and creamy dessert drink featuring tapioca pearls (or sago), a homemade cherry sauce made from frozen dark cherries, sweetener, and a blend of creamy milks.

It’s a refreshing drink with lots of ice and satisfying… packed with cherry flavor, chewy sago pearls, and an ice-cold creamy finish.

It’s one of the coolest sunny day or Summer Asian tapioca drinks to try this weekend and it will not disappoint.

Homemade cherry sauce is easy to make.

Ingredients

For the Homemade Cherry Sauce:

  • 1 cup frozen dark cherries – These dark or black cherries have more concentrated flavor. When they are frozen they are extra sweet since the ripest fruits are chosen to be frozen.
  • 1 tbsp blue agave syrup – You can also use sugar, maple syrup, or honey.
  • 1/2 teaspoon lemon juice (optional, enhances cherry flavor) – Goes well with the cherries and sweetener.

Sago/Tapioca Pearls:

For the Creamy Base:

  • ½ cup evaporated milk
  • ¼ cup condensed milk (adjust for sweetness)
  • ½ cup milk of choice (almond, oat, coconut, or regular milk)
  • OR use ASIAN MILK (Milk Base)

Assembly & Toppings:

Equipment Needed

  • Immersion Hand Blender (for making the cherry sauce)
  • Bowl – to microwave the cherries for cherry sauce or use a pot on the stove
  • Small pot (for boiling the sago)
  • Mixing spoon
  • Strainer
  • Serving glasses

Instructions

Cook the Tapioca Pearls (or Sago)

  1. Bring 4 cups of water to a boil in a small pot.
  2. Add ½ cup tapioca pearls and cook according to package instructions (typically 10–15 minutes), stirring occasionally. Steep for 8 minutes until translucent.
  3. Strain and rinse under cold water to prevent sticking.

Make the Homemade Cherry Sauce

  1. Combine frozen dark cherries and blue agave syrup.
  2. Microwave for two minutes, or heat in a saucepan.
  3. Use your Breville Immersion Hand Blender to blend the cherries into a smooth cherry sauce.
  4. Let the sauce cool down.

Prepare the Creamy Base

  1. In a mixing bowl, whisk together evaporated milk, condensed milk, and your milk of choice until smooth.

Assemble the Drink

  1. Put ice in serving glasses and add lots of cooked tapioca pearls.
  2. Add the creamy milk mixture. Then, add the cherry sauce.
  3. Top with whole dark cherries for extra texture and flavor.
  4. Stir, sip, and enjoy your Creamy Dark Cherry Sago Dessert Drink.

Add-Ins & Variations

  • Coconut Cream – Add a splash for extra richness.
  • Graham cracker crumbles or Biscoff cookies – Makes it like a cherry cake!
  • Matcha Twist – Mix in a bit of matcha for an earthy contrast.
  • Chocolate Drizzle – Dark chocolate shavings or syrup make it even more decadent.
  • Coffee Kick – Add espresso for a cherry mocha vibe.
  • Protein Boost – Blend in vanilla protein powder for a filling treat.
  • Non-Dairy Version – Use coconut condensed milk and oat or almond milk.

Best Tips

  • Adjust Sweetness: You can reduce or increase the amount of condensed milk and blue agave syrup based on your preference.
  • Use Fresh Cherries: If in season, fresh dark cherries work beautifully or use frozen ones from all seasons availability.
  • Alternative Blenders: If you don’t have a Breville immersion blender, a standard blender will work just as well.
  • Perfect Tapioca: If you over-steep the tapioca, the pearls will be too soft. Remove from the hot water once they are clear.

Foodie Elevation Tip

Smear the cherry sauce all over the side of the glass and add some chocolate sauce on the side of the glass. Then pour in your cherry sago mixture for a decadent dessert!

Storage and Leftovers

Leftovers last about 1-2 days since the tapioca will soften the longer it stays refrigerated.

Store in a mason jar or an airtight glass container for fresher and longer lasting leftovers.

FAQs

Can I use fresh or canned cherries for cherry sago?
Yes, both are also good! Be sure to add sugar/sweetener and taste the mixture to adjust to your liking.

Can I make cherry sago ahead of time?
Yes, but store the components separately if possible if you are doing it the night before. It keeps the tapioca or sago more chewy. Combine the sago, cherries, and creamy base closer to serving for the best texture.

Is this very sweet?
It’s lightly sweet and balanced. You can adjust by adding more or less condensed milk or syrup, depending on your preference.
