Cook the Tapioca Pearls
Boil water in a pot. Cook tapioca pearls according to package instructions.
½ cup tapioca pearls, 4 cups water
When almost translucent, remove from heat, cover, and steep for 8 minutes or until fully translucent.
Strain, then mix with blue agave syrup and set aside.

Make the Sweet Coconut Milk Sauce
Heat coconut milk with condensed milk in a saucepan or microwave until well combined.
½ cup condensed milk, 1 can 14oz full-fat coconut milk
Stir in vanilla extract and a pinch of salt.

Let cool before using.
Blend the Frozen Pineapple Mix (optional)
Blend frozen pineapple chunks with a portion of the sweet coconut milk sauce until smooth. This adds a wonderful layer of flavor, depth, texture, and refreshingness to the entire drink. It also allows for more fruit to be blended in if you like.
1 cup frozen pineapple chunks
Assemble the Drink
Place a little bit of ice in a glass. Pour in the blended frozen pineapple coconut mix.
Ice
Add a generous amount of tapioca pearls.
Top with the sweet coconut milk sauce.
Finish with a heaping spoonful of crushed pineapple with juice.
