Ingredients

  • 3 Yellow Mangoes – Cut and freeze. Look for mangoes that are slightly soft to the touch and have a sweet aroma. Also called Manila or Ataulfo mangoes, these are creamy and the best choice.
  • 1/2 cup Coconut Milk – Coconut milk must be from a can for the real, natural, and very creamy version of coconut milk.
  • 2 tbsp Coconut Condensed Milk
  • 4 Ice Cubes
  • 1/4 tsp Vanilla Extract
  • Pinch of Salt
  • Cardamon – (optional) Just a pinch to sprinkle on top
  • Additional ToppingsOptional, can include toasted coconut, sprinkles, mango slices, vegan whipped coconut cream, or regular chantilly whipped cream

Equipment

Instructions

Prepare the Mangoes:

  1. Peel the mangoes and cut the flesh away from the pit. Chop the mango flesh into small pieces.
  2. Place the cut mango pieces in the freezer until they become very frozen.

Blend the Ingredients:

  1. In a blender, combine the frozen mangoes, coconut milk, condensed milk, vanilla extract, pinch of salt, and ice cubes.
  2. Blend on high speed until smooth and creamy. If the mixture is too thick, add more plant-based milk until you reach the desired consistency or crush the ice cubes to allow easier blending.
  3. For an exciting elevation, top the mango milkshake with whipped cream, rice flakes (pinipig), and add a sprinkle of cardamom. Serve in a tall glass with a straw and milkshake spoon.

Notes

  • Be sure to freeze the mangoes for a thick and creamy milkshake without the need for ice cream.
  • Use ripe, yellow Philippine mangoes for the best taste. These are sweeter and creamier than other varieties. They are found in almost all grocery stores or Asian markets.
  • Use coconut milk or favorite milk of choice. Keep in mind, other milks will give a different texture and flavor. Coconut milk, when blended is very creamy and adds to the overall texture of a creamy mango milkshake.

Variations and Add-Ins

  • Add a scoop of your favorite plant-based protein powder to make the milkshake more filling and nutritious.
  • This is a great option for a post-workout snack.
  • Add a scoop of plant based ice cream for an epic mango dessert.
  • Add frozen, ripe banana to the blender for additional creaminess and sweetness.
  • Bananas also provide extra potassium and fiber.
