- Button or Crimini Mushrooms: These are super basic, but loaded with flavor, meaty and dense texture, and super easy to find at every store.
- Shiitake: These are flavorful Asian mushrooms that truly are always delicious, tender, and have a distinct earthy and tasty mushroom flavor. Shiitake mushrooms are my all time go-to. You can use fresh or dry Shiitake mushrooms as a “meatier” style choice.
- Portobello Mushrooms: These large, meaty mushrooms are perfect for grilling or roasting due to their robust flavor and hearty texture. They can be sliced and marinated for a flavorful addition to salads, sandwiches, or as a main course.
- Oyster Mushrooms: With their delicate, soft texture and mild flavor, king oyster mushrooms or baby oyster mushrooms make a great addition to soups, stir-fries, and pasta dishes. They are versatile and can be used as a meat substitute in vegetarian and vegan recipes.
- Maitake Mushrooms: Also known as “Hen of the Woods,” maitake mushrooms have a rich, earthy flavor and a firm texture. They are popular in both Japanese and Italian cuisines and can be grilled, sautéed, or roasted to bring out their robust taste. These are super yummy for this recipe!
- Enoki Mushrooms: Be aware! These mushrooms cook very fast and become completely soft and shrink down to small noodle like mushrooms. If you like a more saucy dish…enokis will get you there. Delicate and slender, enoki mushrooms have a mild, slightly fruity flavor and a unique texture. Enoki is my least favorite choice, but for a sauce-driven and very soft side dish, will be a special option.

To make this delicious dish, you’ll need the following ingredients:
- 3 cups Mushrooms – Button mushrooms, Crimini mushrooms, shiitake mushrooms, or a mix of your favorites. Cleaned and sliced. Squeeze the water out and pat dry.
- 1/2 White Onion – optional; sliced rings or half rings
- 1 tbsp avocado oil
Teriyaki Sauce
- 1/4 cup Low Sodium Soy Sauce
- 2 tbsps Mirin
- 2 tbsps brown sugar
- 1 tsp garlic powder
- 1 tsp ginger powder
- 1/2 tbsp cornstarch slurry – mix 1/2 tbsp cornstarch with 1 tbsp water
- 2 tsp toasted sesame oil – optional; adds a delicate nutty aroma
- Green Onions – sliced thin, garnish
- Cilantro or Parsley – optional, garnish
- Sesame Seeds – optional, garnish
Equipment
- Large Skillet or Wok: To cook the mushrooms evenly.
- Measuring Cups and Spoons: For accurate ingredient measurements.
- Spatula or Wooden Spoon: To stir the mushrooms and sauce.
- Small Bowl: For mixing the sauce.
Instructions
- Clean the mushrooms with cold water. Pat dry with a cloth or paper towel. Slice them if they are large. Cut the ends off.
- In a small bowl, whisk together the soy sauce, mirin, brown sugar, garlic powder, ginger powder, and the cornstarch slurry. Set aside.
- Heat a large skillet or wok over medium-high heat. Add a splash of oil. Once hot, add the onions and set them off to the side and do not move them so they get a little searing.
- Add the mushrooms to the other side and cook for 4 minutes, do not move them right away so they sear! Stir occasionally, until everything is browned and have released moisture.
- Pour the teriyaki sauce over the mushrooms. Stir well to coat the mushrooms in the sauce. Let the mushrooms simmer in the sauce for 3 minutes.
- If using, drizzle the sesame oil over the mushrooms and stir to combine. Remove the skillet from heat and sprinkle the mushrooms with sliced green onions. Serve right away and enjoy.
