I used to go to Whole Foods (a natural food store in my area) and always grab the vegan chocolate pudding from the dessert section. I became obsessed with the silky, mousse-like, and yet very decadent spoonfuls of rich and flavorful chocolate pudding with a total healthy spin and completely dairy-free.
So now with this recipe, my love for some raw vegan dessert continues!
Now, you may have seen three ingredient vegan chocolate pudding recipes, and they don’t cut it for me! A few touches (in addition to the silken tofu chocolate pudding cacao powder maple syrup) and your recipe goes the next level with texture and depth of flavor, and becomes something very special that you’ll fall in love with.
What is Tofu Chocolate Pudding
Silken tofu chocolate mousse pudding is going to change your life in terms of how you enjoy homemade dessert if you haven’t yet tried it. It’s incredibly smooth, creamy, indulgent, and yet so much healthier than commercial desserts.
It tastes like rich, velvety, vegan chocolate pudding all made from tofu!
You will know every ingredient in this super simple vegan chocolate pudding recipe and the combo of silken tofu chocolate pudding with cacao powder (or cocoa powder) and maple syrup is no-fuss, low-effort, high-results!
Tofu is the main star and yet, the flavors are balanced and the silken tofu delivers a very creamy and soft base for the raw vegan chocolate pudding. The cocoa powder gives the flavor, and once everything is set it’s a dessert worthy of serving at a dinner party or Sunday brunch.
Not to mention, this tofu pudding is a superfood! There are so many benefits in natural cacao powder to this recipe that makes it healthy.
NOTE! If you do not like the dark chocolate hints of flavor in cacao powder then you can use cocoa powder for this recipe. Cocoa powder is less intense and has less bitter notes than cacao. Keep in mind, cocoa is more processed then cacao powder.
Vegan tofu chocolate pudding is also kid friendly and I love this recipe…because there is NO avocado! It’s so much better this way because it is simple and stays well in the refrigerator for leftovers. The texture is absolute perfection you will be dreaming the words… silken tofu chocolate pudding cacao powder maple syrup since that is all you need to know!
How to get the Right Texture for Tofu Chocolate Pudding

The texture is so important when making silken tofu chocolate pudding because you want it perfectly smooth!
Use a food processor or hand immersion blender. This allows the ingredients to swirl and gravitate into the center of the blade section where the tofu and cacao powder will perfectly blend.
Give it time, several minutes on high speed to really ensure every bit of the silken tofu, cocoa or cacao powder, maple syrup, and few ingredients are melded together.
You will need to give a little mix with a spoon to ensure all the cacao powder gets mixed in and then continue blending.
That’s it!

Cacao vs. Cocoa Flavor
When making sliken tofu chocolate pudding you can choose between cacao or cocoa powder. You can even mix them. Here are some notes to consider on the flavors.
Cacao Powder Taste
- Rich and Intense Flavor: Cacao powder has a bold, deep chocolate flavor with strong earthy undertones.
- Bitter Notes: It retains some natural bitterness, which can add complexity to desserts and dishes.
- Less Sweet: It tends to have a less sweet profile, making it suitable for recipes that require a true chocolate flavor without added sugars.
Cocoa Powder Taste
- Milder Chocolate Flavor: Cocoa powder offers a smoother, creamier taste with a more subdued chocolate profile.
- Slightly Sweeter: It generally has a sweeter taste than cacao powder, making it more palatable for those who find cacao too intense.
- Less Bitterness: Cocoa powder has lower bitterness, which can be ideal for recipes aimed at a broader audience, especially kids.
Ingredients
Follow these raw, vegan tofu chocolate pudding ingredients perfectly so the flavor is spot on and the texture is just right.
- 12 oz, 1 block SILKEN tofu – must be silken, cold tofu
- 5 tbsp unsweet Cacao or Cocoa Powder – a quality and fine cacao powder is important for great taste and smooth texture, OR USE Cocoa powder instead for less “dark chocolate” notes.
- 4 tbsp maple syrup – or blue agave sweetener
- 1 tbsp regular coconut milk
- 1/8 tsp of vanilla extract
- 1 pinch salt
Equipment
- food processor or hand-held immersion blender
- spoon
- measuring spoons
Instructions

- Remove the tofu from the container and water, and place all of it in your food processor. (I use a Breville immersion blender that is compact and easy to use for the smoothest blending.)
- Add the rest of the ingredients all into the blender.
- Pulse and then blend on high for one minute.
- Take a spoon and scrape the sides and mix in the cacao powder if any is still on top of the mixture. Continue to blend on high until everything is perfectly smooth.
- Transfer to glass pudding jars and refrigerate for several hours for a semi-firm set, then enjoy plain or with toppings!

Notes
- Keep in mind that cacao has a dark chocolate nuance with bitter notes. You can add a dash more vanilla and sweetener to enhance the sweeter notes, OR use fine, quality cocoa powder instead. Cocoa powder is like milk chocolate, more kid friendly, and with less bitter notes.
- Use a quality blender to get the smoothest texture. Traditional blenders do not operate the same as a food processor or immersion blender. This equipment will get the tofu chocolate pudding silky smooth. Your next best option is to press the mix through a strainer if you do not have the right blender.
- Be sure to use silken tofu.
- Adjust the sweetness to your preference, but a nicely sweet mixture will be balanced with the cacao.
- Keep it cold for the best flavor and texture!

Add-Ins and Variations

This tofu chocolate pudding is incredibly versatile! Here are some delicious add-ins and variations to elevate your raw vegan dessert experience:
Flavor Enhancements
- Peanut Butter or Almond Butter: Stir in 2-3 tablespoons of your favorite nut butter for a rich, nutty twist.
- Bouncy Texture: Add tapioca pearls for a delicious and nostalgic addition.
- Chia Seeds and Oats: Mix in chia seeds or oats and leave overnight for a chia seed pudding twist!
- Mint Extract: Add a few drops for a refreshing mint chocolate flavor.
- Espresso Powder: Incorporate 1/2 teaspoon of espresso powder for a mocha version that coffee lovers will adore.
- Coconut Flakes: Top this with shredded coconut for a tropical touch.
- Shaved vegan Chocolate: Top it off with more cacao flavor.
Textural Variations
- Crunchy Toppings: Top your pudding with chopped pistachios or walnuts, granola, goji berries, or cacao nibs for added texture and crunch.
- Crushed Cookies: Sprinkle crushed vegan cookies or pounded rice flakes on top for a delightful mix of flavors.
- Frozen: Freeze in popsicle molds for a fudgey and cold dessert.
Fruit Infusions
- Berries: Layer in fresh or frozen berries (like raspberries or strawberries) for a fruity twist. I love strawberry or razz pureé layered in the middle.
- Bananas: Add 1 ripe banana for natural sweetness and additional creaminess.
- Avocado: This ingredient adds healthy fat and an extra rich pudding base.
Healthier Swaps
- Chia Seeds: Mix in 2 tablespoons of chia seeds for added fiber and omega-3s. This will also thicken the pudding slightly.
- Protein Powder: Add a scoop of plant-based protein powder for an extra protein boost.
Layered Desserts
- Parfaits: Create a parfait by layering the pudding with coconut custard, nutty granola, chia seed pudding, or fresh fruit in individual serving cups for a visually appealing dessert.
- Cake Topping: Use silken tofu chocolate mousse pudding on cake, in trifles, or on top of other desserts.
Tofu chocolate pudding is so versatile from added flavors, textures, or even use as a topping for other cakes and desserts. Have fun and enjoy experimenting.

Questions
How come my tofu is grainy?
It is important to choose silken tofu and you must use a high powder blender such as a food processor or immersion blender and that way the pudding is smooth.
Cacao is too intense for me. What can I use instead of cacao powder?
Use cocoa powder which although it is more processed, it does create chocolate flavor without the dark chocolate elements to the taste.
How can I make the pudding more sweet?
You can add an additional tablespoon of sweetener of your choice or simple syrup. Also, toppings like banana and fruits add natural sweetness.
Can I store leftovers?
Yes! This tofu chocolate pudding is perfect in glass jars for a few days or even freeze the leftovers for up to a three weeks.
Can I use firm tofu?
No. The smooth texture is from silken tofu. Do not use other kinds of tofu for this vegan pudding recipe.
