Ingredients

  • 12 oz 1 block SILKEN tofu must be silken, cold tofu
  • 5 tbsp unsweet Cacao Powder or use cocoa powder to your taste preference; remember cacao and cocoa powder is different; see notes in article
  • 4 tbsp maple syrup or blue agave sweetener
  • 1 tbsp regular coconut milk or almond milk
  • tsp vanilla extract
  • 1 pinch salt

Instructions

  • Remove the tofu from the container and water, and place all of it in your food processor.
    12 oz 1 block SILKEN tofu
  • Add the rest of the ingredients all into the blender.
    5 tbsp unsweet Cacao Powder, 4 tbsp maple syrup, 1 tbsp regular coconut milk, ⅛ tsp vanilla extract, 1 pinch salt
  • Pulse and then blend on high for one minute.
  • Take a spoon and scrape the sides and mix in the cacao powder if any is still on top of the mixture. Continue to blend on high until everything is perfectly smooth.
  • Transfer to glass pudding jars and refrigerate for several hours for a semi-firm set, then enjoy plain or with toppings!

Notes

    • Use a quality blender to get the smoothest texture. Traditional blenders do not operate the same as a food processor or immersion blender. This equipment will get the tofu chocolate pudding silky smooth. Your next best option is to press the mix through a strainer if you do not have the right blender.
    • Be sure to use silken tofu.
    • Adjust the sweetness to your preference, but a nicely sweet mixture will be balanced with the cacao.
    • Keep in mind that cacao has a dark chocolate nuance with bitter notes. You can add a dash more vanilla and sweetener to enhance the sweeter notes, OR USE cocoa powder instead.
    • Keep it cold for the best flavor and texture!
