This is the easiest latik recipe. Made simply from coconut cream, latik is toasted coconut curds that are crispy, crunchy, and a little chewy and compliment an array of Asian desserts and dishes.

Coconut Cream
Regular coconut cream

Instructions
Pour coconut cream into a non stick pan over low medium heat.
2 cans Coconut Cream
Bring to a simmer. Stir often. Watch the coconut oil separate from the coconut curds. Keep stirring.
Simmer and stir till the latik (coconut curds) become deep golden brown.
Strain over a wire mesh strainer.
Cool the latik and you can use your hands to crush it into small little crumbles.
