Easiest UBE Handpie Recipe Ever!

These mini ube pies, hence ube handpie, are so easy, fast, and the cutest purple little ube pies ever! Elevate breakfast with coffee or tea with a tiny ube pie…yea, why not! Ube handpie is so effortless and has that freshly baked, just yummy baked goods vibe written all over them.

These make the sweetest (literally) gift to give to anyone as a comforting treat and box of sunshine.

Ingredients

You will need to have premade and chilled UBE HALAYA in order to make this incredible, delectable ube dessert recipe.

  • ube halaya
  • premade unbaked, pie crusts x 2
  • 1 egg
  • 1 tbsp milk (regular milk is best, or use preferred choice)
  • a little flour

EQUIPMENT

  • parchment paper
  • bake sheet
  • a fork
  • pointy knife
  • basting brush
  • small bowl
  • cookie cutter 4-5″
  • rolling pin

How to Make Ube Handpies

  1. roll out your pie crusts over a floured surface
  2. cut circles
  3. add small dollops of ube halaya
  4. seal with egg wash on the edges and use fingers to press closed
  5. use a fork to really seal the deal
  6. FREEZE for ten minutes
  7. cut small slits
  8. brush egg wash all over the tops
  9. bake per pie crust package instructions
  10. Do NOT overfill your mini handpies

Equipment

  • Parchment Paper
  • 1 baking sheet
  • 1 fork
  • 1 sharp pointy knife
  • 1 small bowl
  • 1 4" circle shape cutter you can use 5" diameter if you want them slightly bigger
  • 1 small basting brush
  • 1 Rolling Pin

Ingredients

  • cup ube halaya see above link how to make ube halaya
  • 2 premade pie crusts sheets unbaked and thawed
  • 1 egg
  • 1 tbsp milk
  • 3 tbsp all purpose flour as needed

Instructions

  • Mix the egg and milk together well. Set aside.
  • Put flour on a cutting board and roll out a pastry pie crust.
    Use your circle cutter to make as many circles as you can and then put together the rest, roll it out and make more circles as you can.
  • Put a small spoon of ube halaya in each circle. About a tbsp.
    Test to see if you need to adjust the amount you are putting in the circles.
  • Very gently without pressing, fold the circle together so the edges are about to meet.
  • Rub eggwash, using your finger tip, all around the edge of a side of the circle.
    Gently press the circle closed, little by little. Press the middle section a little and then the sides, then press closed everything else.
    Try not to press any ube halaya filling out and be sure to clean any off if some comes out.
  • Lay the folded, sealed ube handpie down and use a fork to press all through the edge to seal it well.
  • When all the ube handpies are sealed, space them evenly on the parchment paper/baking sheet and then put them in the FREEZER for 10 minutes.
  • Preheat oven per the pie crust package directions. Usually 450 F
  • Take the ube handpies out of the freezer. Slice two tiny slits in each handpie.
    Brush egg wash on the top of every pie.
  • Bake per pie crust package instructions, but watch the ube handpies that the crust looks slightly golden brown, then take them out the oven. About 10 minutes.
  • Rest them on an elevated wire rack for 20 minutes. Enjoy!
    Do not pack together in any sealed container until they are completely cooled or chilled.

Notes

Do not overpack with filling, or heavily press on the dough with the filling, so that the handpies do not burst during baking.
