What are Tofu Lettuce Cups
The cups are actually made from lettuce. Butter lettuce works the best for tofu cups because they have a cup shape and hold the fillings in the best.
The texture is soft and flavor is mild, which pairs perfectly with firm, Asian-seasoned tofu that’s been cut into tiny bite sized cubes.
The result is a platter of green lettuce cups with delectable filling and served with dips or sauces of choice.
Tofu lettuce cups truly show off that beautiful and healthy Asian food with depth and textures can be made from humble ingredients.

Ingredients
For the tofu:
- 1 block firm tofu, cut into small 1/2″ cubes – Firm tofu stays intact and gives contrast and a more filling mouthfeel to the recipe than soft versions. Use prefrozen tofu for an even more “meaty” texture and extra crispness to the tofu.
- Butter lettuce (leaves separated, washed, and patted dry) – This type of lettuce has perfect “cups” that hold shape and work best with the fillings for lettuce cups. This gives the recipe a restaurant-worthy element and the signature part of what makes “lettuce cups”.
- Avocado oil – light oil for the baking sheet
For the tofu Asian sauce:
- 1 tbsp soy sauce
- 1/2 tbsp mirin
- 1 tsp brown sugar or honey
- Pinch garlic powder
- Pinch onion powder
- Pinch ginger powder
- 1 tbsp water
- 1/2 tbsp cornstarch
Equipment
- Baking sheet or air fryer – Use to crisp and cook the firm tofu bits
- Parchment paper or foil
- Saucepan – make the Asian sauce for the tofu
- Small Bowl – mix the sauce
- Whisk – smooth the sauce
- Mixing spoon – toss the tofu with the sauce
- Knife and cutting board – prep the tofu
- Paper towel – pat tofu of excess moisture
Instructions
1. Cook the tofu
- Preheat oven or air fryer to 350°F.
- Pat the tofu dry of excess moisture and then cut the tofu into small cubes and spread in a single layer on foil or parchment paper that has a touch of avocado oil spread on it.
- Cook for 12–15 minutes until lightly browned and slightly crisp.
2. Make the sauce
- In a small bowl, whisk the soy sauce, mirin, sugar or honey, garlic powder, onion powder, ginger powder, water, and cornstarch until very smooth.
- Place sauce in a small sauce pan and bring to a simmer over medium heat, stirring constantly.
- Once it thickens into a glaze consistency, remove from heat immediately.
3. Toss the tofu
- Add the cooked tofu into the sauce and toss with a spoon until evenly coated.
4. Assemble
- Lay butter lettuce leaves on a platter. A platter with sides works best to hold the lettuce leaves. Be sure the “cups” of the lettuce leaves are facing out so they can hold the filling.
- Spoon the seasoned tofu into each leaf.
- Serve immediately as is or with dips and sauces for drizzling. Garnish with optional scallions, sesame seeds, chili flakes, and cucumber slices or other vegetables (julienned carrots and bean sprouts).
Best Tips
- Pat tofu dry before cooking for better browning
- Don’t overcrowd the pan or air fryer
- Keep the tofu cubes small for better texture
- Let the sauce fully thicken before adding tofu
- Always pat lettuce dry so it stays crisp

Great dipping sauces:
5 More Ways to Make the Tofu Filling
1. Garlic Chili Tofu
- Add fresh minced garlic and chili flakes to the sauce
- Finish with chili oil for extra heat
- Slightly bolder and spicier flavor
2. Miso Sesame Tofu
- Add 1 tsp miso paste to the sauce
- Finish with a drizzle of sesame oil
- Slightly deeper, savory, umami-rich flavor
3. Shiitake Mushroom Tofu
- dice shiitake mushrooms into tiny pieces
- sauté the mushrooms in avocado oil and then pour in the Asian sauce and bring everything to a simmer until thickened
- Then toss the tofu into the sauce and mushrooms combination
- use dried Shiitake mushrooms for a “meatier” version
4. Soft-Style Tofu
- Skip air-frying or baking the tofu and directly add the tofu to a pan, over medium heat, that has some avocado oil
- Lightly pan fry the tofu until heated through
- Add the sauce directly to the pan and toss with the tofu until well coated
- The tofu will be softer and absorb more of the sauce
5. Tofu Lettuce Cups Ultimate Platter
- Consider this if you are making the tofu cups for a family meal or gathering
- Serve as the directions say, but add sides of: thin sliced cucumbers, sauteéd bean sprouts, mandolin cut red cabbage, thin jicama strips, cilantro sprigs, and add several drizzling sauces to choose from
- This presentation is like a deconstructed tofu spring roll and will definitely impress!
How to Make Tofu Lettuce Cups for Meal Prep
- Wash and fully dry the butter lettuce. Store in an airtight container lined with paper towels.
- Store the cooked, sauced tofu separately in another container.
- At lunchtime, simply reheat the tofu and assemble fresh lettuce cups.
- This keeps everything crisp and prevents soggy lettuce.
- Put dipping sauces into their own containers as well.
Storage and Leftovers
- Store tofu in an airtight container in the fridge for up to 3 days.
- Reheat tofu in the microwave, covered, with a splash of water.
- Do not store assembled lettuce cups, as they will get soggy.
- Keep lettuce separate until ready to serve.
FAQs
Do I need to press the tofu?
Not required since this is an everyday and quick tofu recipe, but patting it dry helps it crisp better.
Can I pan-fry instead of baking?
Yes, pan-fry in a little oil until golden, then toss in sauce.
Is this kid-friendly?
Yes, just skip spicy toppings.
Can I make this ahead of time?
Yes, just store components separately and assemble when ready.
What type of lettuce works best? Can I use Romaine?
Butter lettuce is ideal because it’s soft, flexible, and naturally forms cups. Romaine does have shape to hold the tofu filling but it’s not a good “cup”. It also has more crunch so decide on your preference.
