Miso green beans are a go-to for me beause I always cook with miso and I also like to make my veggies taste… amazing. Why wouldn’t I want to devour a pound of green beans in one sitting?

This way of making greens beans is just too tasty, very easy, and I surprise myself everytime with how much “greens” I’m actually eating!

This is real food.

A colorful and wholesome Asian side dish that complements a lot of proteins from grilled fish, meats, to tofu recipes.

Anyone can make this and if you have miso paste in your fridge (like I always do), you probably have all the other ingredients.

Grab the miso paste from usually any grocery (our local Trader Joe’s even carries it) or an Asian market.

This dish is it. My style of miso butter green beans only needs a tablespoon of butter or use plant-based if you want to keep it vegan.

It’s not that saucy… just a great balance of flavor that lets the beans shine and do their thing.

Let’s go!

What Are Miso Green Beans?

Miso green beans are fresh green beans cooked in a skillet, left to get a little sear and blistering, and quickly tossed in savory miso sauce with a touch of butter until tender, but still crisp.

The miso butter green beans are lightly coated, colorful, and have a lot of umami and lip-smacking flavor.

These green beans should remain bright green and tender-crisp, with lightly blistered and seared edges that add extra flavor.

Miso green beans are commonly served alongside Japanese dishes. However, this versatile recipe goes well with a wide variety of Asian recipes, meat dishes, seafood, and simple weeknight meals.

Why You’ll Love These Miso Butter Green Beans

  • Ready in about 15 minutes
  • Uses simple pantry ingredients
  • Easy enough for weeknights
  • Naturally vegetarian and vegan if you use plant-based butter
  • Great way to elevate fresh green beans and mix things up
  • One pot dish that is low mess

What Do Miso Green Beans Taste Like?

Miso butter green beans have a flavor that is:

  • Savory and umami-rich with natural salt from the miso, sesame, and soy sauce (no added salt needed)
  • Balanced with butter (or plant butter) and the mirin adds a very subtle sweetness
  • Brightened by fresh lemon garnish

The combination of miso, butter, and a bit of soy sauce creates a restaurant-quality side dish with very few ingredients.

Getting my kids in the kitchen is one of the rewarding things about cooking and my passion for food. Perfection is not the goal, but we do out best! Here we are trimming the beans.

Slicing the beans in half gives more area for the sauce to cook. A little diagonal slice also helps capture more sauce.

Ingredients

Green Beans Setup

  • 1 pound fresh green beans, trimmed and sliced in 3″ long pieces – fresh is best for the crisp and colorful turnout of the beans
  • 1 tablespoon avocado oil – high heat tolerant to lightly sear the beans and helps carry the butter. This also aids in keeping the butter from burning.
  • 1 tablespoon butter or plant-based butter – This make miso butter greens beans balanced. The dish, otherwise, has no fat and this small amount of butter elevates the flavor, texture, and helps coat the beans evenly, helping the miso stick to the beans as well.

Miso Sauce Mix

  • 1 tablespoon miso paste – The amazing fermented soy bean paste that takes simple things to a whole other level. This is the shining ingredient. Use white (mild) or yellow/brown miso (the middle level miso which I recommend and use for this recipe)
  • 1 tablespoon regular soy sauce
  • ½ tablespoon mirin – Japanese cooking rice wine that adds a touch of depth and sweet.
  • 1 teaspoon sesame oil – adds a layer of flavor with nutty and toasted notes
  • 1 teaspoon water
  • Pinch garlic powder (optional)

Garnish

  • Lemon wedges

Equipment Needed

  • Colander
  • Knife
  • Cutting board
  • Small bowl
  • Large skillet
  • Tongs or spatula

How to Make Miso Green Beans

  1. In a small bowl, combine the Miso paste, Soy sauce, Garlic powder, Mirin, sesame oil, and Water. Mix until smooth and set aside.
  2. Heat avocado oil in a large skillet over medium-high heat. Add the green beans, leaving them to sear a little and cook, tossing occasionally, until they begin to blister and develop lightly seared spots.
  3. Add the pat of butter to the skillet. Toss the green beans until the butter melts and coats them evenly.
  4. Lower the heat and then pour the prepared miso sauce into the skillet. Toss the green beans very well until evenly coated and cooked through. Do not burn or high-simmer the sauce, or else it will burn.
  5. Transfer to a serving platter and serve immediately with lemon wedges on the side. Enjoy miso green beans!

Best Tips

  • Use fresh green beans for the best texture. I do not recommend frozen or canned for this recipe.
  • Do not burn the miso sauce! Be sure to adjust the heat accordingly.
  • This recipe moves very fast! Have your ingredients (mise en place) all set up.
  • Cook over medium-high heat to achieve blistered edges.
  • Mix the miso sauce thoroughly before adding it to the skillet. This makes sure the sauce is smooth.
  • Do not overcook the beans; they should remain slightly crisp and colorful.
  • Add a squeeze of lemon just before serving for maximum layers of flavor.
  • Taste before adding extra salt since miso and soy sauce are already salty.

Foodie Elevation Tip

You can slice the beans thin and in half to speed the cook time, add more delicate texture, and have more saucy beans if you prefer.

Storage and Leftovers

Refrigerator

Store leftover green beans with miso in an airtight container for up to 2 days. The longer the leftovers, the softer the beans will become.

Reheating

Reheat in a skillet over medium heat until warmed through. Easier is to microwave in 30-second intervals with a splash of water.

Freezing

Not recommended! The green beans will turn mushy.

FAQs

What type of miso is best for miso green beans?

White miso (shiro miso) or yellow/brown miso (Shinshu miso) is recommended because it has a mild, slightly sweet flavor that pairs well with vegetables. The Shinshu is what I use for most of my miso recipes and for this one. It’s in the middle between mild and very salty… it’s just right.

Can I use frozen green beans?

No. They will be too wet and soft. Fresh green beans provide the best texture and blister more easily in the skillet.

Are miso butter green beans vegetarian?

Yes, this recipe is vegetarian as written, but if you want vegan, use plant-based butter.

Can I make these dairy-free?

Absolutely. Substitute the butter with a plant-based butter alternative.

Why add lemon wedges?

Fresh lemon juice brightens the rich umami flavors and balances the savory miso butter sauce.

Can I make this ahead of time?

Yes. You can prepare the beans up to a day in advance and reheat them before serving. They won’t be as crisp the next day.

Are miso green beans gluten-free?

They can be if you use a gluten-free soy sauce or tamari.
