I think in major culinary-focused cities you’ll find miso cod, blackened miso cod, or other variations of it on the menu at the finest establishments.

It’s “very Nobu(a super posh spot in Malibu along the California coast that overlooks the ocean) and you can be sure, people spend the money for the view and they always order that Nobu’s blackened miso cod.

While this is not in the same realm, this home cooked recipe doesn’t ever stop me from enjoying the flaky and delectable flavor of light miso cod, cooked to perfection, and all done with such ease.

It almost seems silly when you’re done, how the most basic and few ingredients can create something quite special. It’s sure to become a repeated recipe for you.

What Is Easy Air Fryer Miso Cod?

Easy air fryer miso cod is a quick, weeknight-friendly Japanese-inspired recipe made with Pacific cod (not black cod) coated in a savory-sweet miso glaze and cooked until flaky and lightly caramelized.

Unlike traditional miso black cod, which often requires long marinating times and a richer, oilier fish, this version uses lean Pacific cod and a simple marinade that delivers big umami flavor fast. It’s also big flavor, not big price. It’s as easy as this simple Asian Pacific Cod recipe, but with miso!

The air fryer cooks the fish evenly, locks in moisture, and creates a glossy miso finish in under 15 minutes—making it a super approachable, no-fuss way to enjoy miso-glazed fish at home. You can do this!

Ingredients

  • Wild Pacific Cod (1 pound or 4 small fillets)
    • Cod is mild, flaky, and naturally lean, making it the perfect canvas for bold miso flavor. Wild Pacific cod holds its shape well in the air fryer and absorbs the marinade without becoming mushy. You can use any cod you like, but thicker fillets work best for juicy results.
  • Miso Paste (3 tablespoons – white or yellow)
    • Miso is the heart of this recipe. White or yellow miso adds savory umami with a gentle sweetness that won’t overpower the delicate fish. These lighter misos create a balanced glaze that caramelizes beautifully in the air fryer.
  • Mirin (2 tablespoons)
    • Mirin brings mild sweetness and acidity, helping the miso glaze smooth out and lightly caramelize. It balances the saltiness of the miso while adding that classic Japanese depth.
  • Honey (2 teaspoons)
    • Honey enhances the natural sweetness of the fish and helps the glaze develop a glossy finish. It also softens the savory edge of the miso without making the dish overly sweet.
  • Black Pepper
    • A small amount of pepper adds gentle warmth and contrast to the sweet-savory glaze, keeping the flavors from tasting flat.
  • Optional: Sake (for cleaning the fish)
    • A light rinse or brush of sake helps remove any fishy aroma and subtly seasons the cod. This step is optional but highly recommended for the cleanest flavor.
  • Optional Garnishes: Green Onions & Sesame Seeds
    • Thinly sliced green onions add freshness and color, while sesame seeds bring a light nutty crunch. Both elevate the final dish visually and flavor-wise with minimal effort.

Instructions

  1. Prep your fish by gently rubbing with sake, or cold water. Pat very dry.
  2. In a mixing bowl, combine the miso paste, mirin, and a bit of honey. Whisk until well combined to create the miso marinade. Save two tablespoons of marinade to the side.
  3. Place the cod fillets on a platter or cutting board, coating the top and sides of the filets. Then, very lightly sprinkle some pepper on the tops and bottoms of the filets.
  4. Cover the bowl and let the cod marinate in the refrigerator for 15-20 minutes, allowing the flavors to meld.
  5. Preheat your air fryer to 415°F (200°C) for 8 minutes.
  6. Remove the marinated cod fillets from the refrigerator. Remove excessive marinade. It should be a thin layer. Place the fillets on parchment paper, in the air fryer basket, making sure they are not overlapping.
  7. Air fry the cod fillets for 8 minutes, baste with extra marinade miso sauce, then broil for 2-4 minutes, ensuring they are not burning on top. They should be browning and turning golden on top.
  8. Once the cod is cooked, carefully remove it from the air fryer using tongs and transfer it to a serving plate.
  9. Garnish the air fryer miso cod with sliced green onions and sesame seeds, if desired, and serve immediately.

Notes

  • Adjust the cooking time based on the thickness of your cod fillets as well as the model of air fryer you are using. My air fryer required a 3.5 minutes broil. Be sure you watch here as to not burn the top of the cod.
  • Baste with extra miso marinade sauce towards the end.
  • For a richer flavor, you can marinate the cod for up to 24 hours in the refrigerator.
  • Make sure to preheat your air fryer before adding the cod to ensure even cooking and crispy results.
  • Time is of the essence. Do not go over time so the filets are tender and not overcooked. Cod cooks fast and you will know it is doen because the fish will just flake apart easily.
