Ingredients

Strawberry Puree Layer

  • 1 cup fresh or frozen strawberries
  • 2 tbsp sugar or sweetener of your choice
  • 2 tbsp water
  • Optional: 1/4 tsp lemon juice to enhance the strawberry flavor

Milk Layer

  • 1 cup milk of your choice dairy, almond, oat, soy, coconut, Hokkaido milk, or evaporated with regular milk mix
  • Ice cubes optional, for an iced version

Matcha Layer

  • 2 tsp high-quality matcha powder preferably ceremonial grade for the best flavor; add more or less per your taste preference
  • 2 oz hot water around 175°F/80°C
  • 1 tsp honey or sweetener optional

Instructions

Prepare the Strawberry Puree

  • Combine the strawberries, sugar, and water in a small saucepan over medium heat (or microwave for a faster preparation)
    1 cup fresh or frozen strawberries, 2 tbsp sugar, 2 tbsp water, Optional: 1/4 tsp lemon juice
  • Cook for 5-7 minutes, stirring occasionally, until the strawberries are soft and the mixture is syrupy. Remove from heat and let cool slightly.
  • Blend the mixture into a smooth puree using a blender or immersion blender.
    Optional: Strain the puree through a fine mesh sieve to remove seeds for an extra smooth and refined texture.

Whisk the Matcha

  • Sift the matcha powder into a small bowl to remove any lumps.
    2 tsp high-quality matcha powder, 2 oz hot water, 1 tsp honey or sweetener
  • Add the hot water and whisk vigorously using a bamboo whisk (chasen) or handheld frother until the matcha is smooth and frothy. Stir in honey or your preferred sweetener if desired.

Assemble the Latte

  • Layer 1: Pour the strawberry puree into the bottom of your glass.
  • Layer 2: Add ice cubes if making an iced latte, then slowly pour the milk over the back of a spoon to create the second layer. This helps maintain the distinct layers.

  • Layer 3: Gently pour the matcha over the milk layer. If the milk is less dense than the matcha mix you can expect the matcha to flow into the milk more. Using the back of a spoon or pouring the matcha over an ice cube instead of straight into the actual milk will help keep it slightly more layered.

Notes

  • Make It Vegan: Use plant-based milk and a vegan sweetener like agave or maple syrup.
  • Add a Topping: Whipped cream, strawberry slices, condensed milk, or a sprinkle of matcha powder can take your drink to the next level.
  • Boost the Flavor: Add a splash of vanilla extract to the milk or mix a bit of strawberry puree into the matcha for a unified taste.
  • Texture: Add jellies like tapioca pearls, nata de coco, boba balls, or use Hokkaido milk for a super creamy and velvet milk texture.
