  • cup strawberries ripe
  • 3 tablespoons chia seeds
  • 2 cups almond milk or any preferred dairy-free milk - I like coconut milk for a thicker mixture.
  • 1-2 tablespoons maple syrup adjust to taste
  • ½ teaspoon vanilla extract
  • 1 pinch salt
  • raw honey optional as a topping

Instructions

Make Chia Seed Pudding:

  • In a bowl, combine chia seeds, almond milk, maple syrup, pinch of salt, and vanilla extract. Stir the mixture thoroughly to ensure that the chia seeds are well combined.
    3 tablespoons chia seeds, 2 cups almond milk, 1-2 tablespoons maple syrup, ½ teaspoon vanilla extract, 1 pinch salt
  • Place the chia seed mix in the refrigerator for at least 4 hours, but preferably overnight, to allow the chia seeds to expand and create a pudding-like consistency.

Prepare the Strawberries:

  • Wash and remove the stems from the strawberries. Chop them into small pieces. Blend some of them for a smoother texture and a layered effect. This is optional.

Serve and Enjoy:

  • Once the pudding has reached the desired consistency, give it a good stir and portion it into serving dishes. Layer with blended strawberry, and top it with the sliced strawberries.
  • Add a drizzle of raw honey if you would like extra sweetness.
