Equipment

  • 10 bamboo skewers soak in water for thirty minutes
  • 1 large tray to transport skewers
  • 1 platter serving tray

Ingredients

  • lbs Boneless, skinless chicken thighs

Filipino BBQ Marinade

  • ½ cup regular soy sauce
  • ¼ cup oyster sauce regular; vegan; gluten free are all fine
  • ¼ cup brown sugar
  • 3 tbsp coconut vinegar or white distilled vinegar
  • 3 tbsp fresh lime squeezed
  • 7 garlic cloves crushed/smashed
  • 1 tsp ground black pepper

Basting Sauce

  • 1 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 3 tsp squeeze of lime

Instructions

  • In a large glass bowl, combine all the marinade ingredients. Mix well.
    ½ cup regular soy sauce, ¼ cup oyster sauce, ¼ cup brown sugar, 3 tbsp coconut vinegar or white distilled vinegar, 3 tbsp fresh lime, 7 garlic cloves
  • Cut the boneless chicken thighs into bite-sized pieces.
    1½ lbs Boneless, skinless chicken thighs
  • Add the chicken pieces to the marinade bowl, making sure they are well coated. Cover the bowl and marinate in the refrigerator for at least 2 hours, but not more than 3 hours.
  • While the chicken is marinating, soak the bamboo skewers in water for about 30 minutes. This prevents them from burning during grilling.
  • Preheat your grill to medium-high heat.
    Thread the marinated chicken pieces onto the soaked bamboo skewers.
    In a small bowl, mix together the basting sauce ingredients.
    1 tsp ground black pepper, 1 tbsp soy sauce, 2 tbsp oyster sauce, 1 tbsp brown sugar, 3 tsp squeeze of lime
  • Once the grill is hot, place the skewers on the grill and cook for about 4-5 minutes on each side, or until the chicken is cooked through and slightly charred.
    Keep turning and basting on each turn.
    Keep the chicken a little distant from the grill flame as to not burn the entire skewers due to the sugar in the marinade and sauce.
  • While grilling, continuously brush the basting sauce onto the skewers, turning and basting each side.
  • Once the chicken is cooked through and has a nice glaze, remove the skewers from the grill.
    Serve the Filipino BBQ skewers right off the grill and enjoy!

Notes

About 8-10 minutes over a very hot grill, the inside of the chicken should be cooked through and opaque. The internal cooked temperature for chicken thighs is 165 F.
