  • 2 tbsp ube halaya ube jam OR 3/4 tsp of ube extract
  • ½ cup old-fashioned rolled oats must be ROLLED oats and not quick oats
  • ¼ cup coconut milk
  • ½ cup plant milk or milk of choice
  • 2 tbsp evaporated milk for added creaminess; optional
  • 1 tsp chia seeds
  • 2 tsp sweetener honey, maple syrup, date syrup, or agave
  • ¼ tsp vanilla extract optional
  • Coconut shreds optional topping
  • More Toppings ube halaya, extra evaporated milk or condensed milk, coconut, yogurt, fresh fruit, nuts, seeds, or granola

Instructions

  • Mix Ingredients: In your container, add ube halaya or ube extract, all the milks, chia seeds, sweetener, and vanilla extract. Mix well to ensure everything is evenly distributed.
    2 tbsp ube halaya, ½ cup old-fashioned rolled oats, ¼ cup coconut milk, ½ cup plant milk or milk of choice, 2 tbsp evaporated milk, 1 tsp chia seeds, 2 tsp sweetener, ¼ tsp vanilla extract
  • Add the Oats: Mix in well the oats, ensuring they are coated and incorporated.
  • Seal and Refrigerate: Cover the container with a lid and refrigerate overnight or for at least 6 hours.
  • Stir and Top: In the morning, give the oats a good stir. Add some extra milk of choice to make it creamier if you wish. Add your favorite toppings like extra ube halaya, fresh berries, sliced bananas, almonds, or shredded coconut. Try coconut shreds mixed with condensed milk as a sweet and indulgent topping!
