2cupsunsweetened shredded coconut goes in the mixture; do not pack
1cupunsweetened shredded coconut save aside for rolling
¾cupsweetened condensed milkuse coconut condensed milk for vegan version

Mix the Base
In a large mixing bowl, combine sweetened condensed milk, vanilla extract, and a pinch of salt. Add the shredded coconut and mix well with a spatula until fully combined and sticky. If using add-ins like nuts or chocolate chips, fold them in now. The mix should be thick and stick to the spoon, never runny. You can add more condensed milk if it is overly thick/crumbly. It should be sticky and thick.

Chill
Place the mixture in the fridge for 10–15 minutes. This makes it easier to roll into balls, especially if the mixture feels too sticky.
Shape the Balls
Using a tablespoon or small cookie scoop, portion out the coconut mixture and roll into balls between your palms. If the mixture sticks to your hands, lightly dampen them with water or oil.

Roll each ball in additional shredded coconut to coat the outside. This gives them a beautiful finish and prevents sticking.
Chill and Set
