In a mixing bowl, add the chilled heavy cream.
1 cup heavy cream
Using a hand mixer or stand mixer, whip the cream on medium-high speed until it begins to thicken.
Add the confectioners' sugar and vanilla extract and continue to whip the cream on high speed until soft peaks form. Be careful not to over-whip the cream, as it may become grainy. Stop as soon as the stiff peaks form.

Once the desired consistency is achieved, use the Chantilly whipped cream immediately or refrigerate it until ready to use.
